Some Features Modules questions

I am starting to use features on a previously developed site and I have some questions after watching the video series on the Features module:

-The site has blocks defined. Do I have to port every bock to a box in order to export to code?

-How do I know how to package Strongarm vars? For example, there are numerous seo modules, like seo checklist, xml sitemap, etc. Is it better to put all of those in one big "SEO" feature, or should I leave them alone and then have each new feature I create pick out its own seo-related Strongarm vars.

-The biggest question of all is how to know what's still in the database once I've created all my features. I'll be able to tell that I've captured all the content types, but what about configuration for modules that don't support export? Even if the production site were to appear to work fine, it seems like it would be easy to forget lots of config-related stuff that I had no idea I even had to look for.

This is my first time trying to use Features Module and it seems a little daunting. I'm sure Drupal life will be much more pleasant once I iron out all the kinks!
