I've managed to bring in about 100 records with 8 fields each with a Drupal 7 installation on localhost/wamp, and I can manipulate these fields as desired with Views.

What I can't figure out is if there's a way from within the Drupal framework to edit the actual data?
Is there a way to do that, or would I have to modify the text in the database itself?

If the records you've brought

If the records you've brought in are instanced of content types, you ought to be able to edit the individual records. For example, if you want to edit one field in a "Listing" type record:
a) find all Listing records by going to Find Content and filtering on type Listing:
b) find the record you want to check, & click the 'Edit' link under Operations:
brings you to a page (where xxxxxx is the node number of that content)
c) this will bring up a screen that will allow you to edit the contents of that record
